His journey is defined by dedication, global experience, and a commitment to excellence that is evident in every dish served.


Chef Ala brings to Oak Park over two decades of professional cooking experience, making him a seasoned expert in the culinary world. He holds the prestigious title of a certified Executive Chef with the American Culinary Federation, a distinction that reflects both his technical skill and deep understanding of culinary principles.


Throughout his career, Chef Ala has participated in numerous international culinary salons, where he showcased his talent on a global stage. These experiences not only refined his technique but also broadened his perspective, allowing him to incorporate diverse influences into his work.


One of his most notable achievements was serving as the opening Executive Chef of the Historic Allerton Hotel in Chicago following its $80 million renovation. In this role, he played a key part in establishing the hotel’s culinary identity, delivering high-quality dining experiences that matched the prestige of the property.


His impact on Chicago’s dining scene extends further through his leadership roles at Le Meriden Hotel and Chez Paul Restaurant, where his work earned recognition for both quality and consistency.


Beyond Chicago, Chef Ala continued to expand his expertise in Boston, where he served as Chef at The Colonnade Hotel and Brasserie Jo. His time there was marked by innovation and a deep commitment to French-inspired cuisine.


In Florida, he brought his culinary talents to the Boca Raton Resort and Club, contributing to one of the region’s most respected hospitality destinations.


Perhaps one of the most influential chapters of his career was spent in the Caribbean, where he worked for seven years at high-end resorts across Puerto Rico, the U.S. Virgin Islands, and the British Virgin Islands. This experience allowed him to develop a strong appreciation for fresh ingredients, bold flavors, and the importance of creating memorable dining experiences in diverse environments.


These global experiences have shaped Chef Ala into the accomplished chef he is today. His approach blends traditional techniques with modern creativity, resulting in dishes that feel both familiar and refined.
